Mocktail Timur Nova
This mocktail offers a surprising balance between the spicy warmth of Timur pepper with a grapefruit undertone and the powerful AQUALEX sparkling water. A subtle hint of grapefruit adds a fresh and slightly bitter undertone.
Ingredients
For 1 glass (25cl)
- 20 ml Paragon Timur Berry
- 130 ml AQUALEX sparkling water
- Sprig of rosemary
- Dried grapefruit
- Ice cubes
For 1 bottle (75cl)
- 100 ml Paragon Timur Berry
- 650 ml AQUALEX sparkling water
- Sprig of rosemary
- Dried grapefruit
- Ice cubes
Preparation
- Fill a long drink glass with ice cubes
- Add the Paragon Timur Berry
- Top up with sparkling water from the AQUALEX tap
- Stir everything well with a bar spoon
- Garnish with a sprig of rosemary and dried grapefruit

Hannes Desmedt is a trained sommelier, and out of love for fine wines and a passion for foodpairing, he developed a fondness for gastronomic cocktails. Hannes taught himself "the art of mixology" and applied it to create alcohol-free food pairings at the former three-star restaurant Hertog Jan in Zedelgem. After several years in top-tier Belgian gastronomy, Hannes started his own consulting business, Wine Blend. By participating in prestigious competitions and winning the Copa Jerez & Campari Negroni Competition, he quickly became an established figure in the bartender community. Hannes now specializes primarily in alcohol-free & low-alcohol cocktail catering/workshops and teaches low-no cocktails in hospitality at the Eigentijds Vlaams wijninstituut/Syntra West.
